russian salad in the bowl

For some reason Canadians are usually not too fond of Russian food. But in my experience this salad is always welcome on the holiday table. In Canada it's usually called Russian salad, and in Russia we call it "Olivier". It's a traditional treat for Christmas and New Year holidays. To get the perfect salad for a family of 6 you would need:

  • 5-7 boiled potatoes 
  • 3-5 boiled carrots (don't overcook them or they would become mushy)
  • 5 hard boiled eggs 
  • 1 can of green peas (preferably unsalted/unsweetened)
  • 5 pickles
  • 1 Peeled Granny Smith apple
  • 300g of bologna or boiled chicken (you may skip the protein if you do not eat meat)
  • Mayo to taste (you can do half mayo and half sour cream for a "light" salad)
  • Salt and pepper to taste

Whenever I make this salad, I save lots of time by boiling the vegetables together in a pressure cooker and then using the chopper.
