Serve for 6-8 people

Ingredients #1 (for filling)

  • 1 pkg wonton wrappers (can buy it in any supermarkets)
  • 1lb minced pork
  • 1tbls minced fresh shrimp
  • ½ tsp salt
  • 1 tsp sugar
  • 1 tsp light soya sauce
  • ½ tsp dark soya sauce
  • 1 tsp chicken soup base
  • 1 tsp oyster sauce
  • 1/4 tsp ground pepper
  • ½ egg & ½ for making Wonton dumplings
  • 1 tbsp cold water

Ingredients #2 (for broth)

  • 1lb fresh pork bones or fresh chicken bones
  • 5 lbs cold water
  • 1 tsp salt
  • 2 tsps chicken soup base
  • 1 tbsp chopped green onions

Method:

  • Put pork bones in a boiler and put some water in it to boil the bone for a few minutes. Take the boiler pour out the bone in a strainer and rinse with cold water. Replace the bone in a boiler and put 5lbs of water in it. Turn on the heat to boil the bone an hour until the bone softens, and the water turns into a rich of broth.
  • Then put minced pork and all of the filling ingredients in a bowl to mix them up. Take out the filling on a plate and prepare to make dumplings.
  • First, take a package of wrappers and shake them, so the wrappers don’t stick together. Second, take one wrapper and moisten the middle with a few drops of beaten egg. Then put 1 tsp (10g) of filling in the middle of the wrapper and wrap it up into a dumpling.
  • Finish making the dumplings one by one. After the bring a pot of water to boiling and drop the dumplings into the hot water for about 4 to 5 minutes until they rise to the surface.
  • Use a spider strainer (5” basket with long bamboo handle) to filter the dumplings and divide them into several bowls.
    Spider strainers are very handy in the kitchen when making soup. The strainer basket has a wire mesh pattern that looks like a spider web pattern. You can lift out any bones very easily. It is sold in many department stores, like Walmart or you can order it from amazon.com.
  • The last step is to strain the bones out of the pot and then heat up the broth very hot. Add salt, chicken soup base, and green onions. Use a ladle to stir the broth and pour the broth in the Wonton soup bowls. Now you have a rich and fresh Wonton soup!

Tip: Boiling the Bones for a Clear Broth

  • The first step is to boil the bones in water. Take them out and boil them again in a fresh pot of water. Use only the broth after you boil the bones for the second time. To save time, boil the broth when you make the filling and dumplings at the same time. If you want more flavour in your Wonton soup, simply add more vegetables, such as bok choy, lettuce and broccoli.
