white fish with tomato sauce and rice

Preparation: 10 minutes, cook: 50 minutes

Makes 4 servings.

Ingredients:

  • 3 Tilapia
  • 1 piece fresh ginger
  • 2 medium onions sliced
  • 2 garlic cloves, finely minced
  • 2 large tomatoes, diced
  • 4 tablespoons chopped fresh chives,
  • 5 tablespoonsof extra virgin olive oil
  • 25 cl of water
  • ½ teaspoon of black pepper
  • salt

Directions:

  1. Heat 2 tablespoons of the olive oil in a large skillet over medium heat.
  2. Add sliced onions, garlic, grated ginger, cook approximately a minute or two longer.
  3. Add the diced tomatoes, stir to combine. Let it sauté until slightly softened
  4. Sprinkle with salt.
  5. Remove from heat when sauce creates a thicker rim around the edge of the skillet.
  6. Reserve to add to the fish after.
  7. Meanwhile, in other skillet heat the remaining olive oil over medium heat.
  8. Add the chopped chives.
  9. Sprinkle Tilapia with salt and pepper , slide on to the chives, pour the sauce tomato.
  10. Pour in the water. Simmer until cooked or until tilapia flakes easily with a fork.
  11. Add some more oil if necessary.
  12. Season with remaining salt and pepper,
  13. Serve hot with white rice.
  14. Enjoy!
