red peppers stuffed with meat and grains

Stuffed sweet peppers are a treat that can be enjoyed as lunch or dinner. It's easy to do and you get out of the rut for a week change, 4 servings.

Ingredients:

  • 4 Green peppers (large)
  • ½ medium onion.
  • ½ pound ground beef
  • ¼ cup chopped green beans
  • ¼ cup chopped carrot
  • ¼ cup diced potatoes
  • 2 tablespoons all-purpose flour
  • 2 eggs
  • Pepper to taste
  • 1/4 cup mozzarella
  • Sufficient frying oil

Preparation:

To start making our delicious stuffed peppers, we pass the peppers by oil and we put them in the oven at 350 degrees for 10 minutes to be able to remove the skin (traditionally they are roasted in coal for the same purpose) after that time we take out our peppers, we remove the skin, we open them and we remove all the seeds.

Filling:

In a saucepan sauté the onion and add the ground beef; Add the green beans, carrot and potatoes. In that order,when everything is well cooked and tender it is removed from the fire (fill each chili with this mixture and reserve). In a bowl beat the two eggs to the snow point, add the flour and wrap each pepper with this mixture and fry in hot oil until brown.

Preparation of the sauce:

In the blender put the tomato, onion, cayenne pepper, this mixture boils for about 10 minutes, control the water and thickness to your liking. Then add the peppers to the sauce or put it on top. If you want to add a grated mozzarella, this is the time to do it. Serve hot accompanied with white rice and enjoy them
