There is a variety of recipes for the Ukrainian traditional soup called borshch, but I would like to give you my own recipe.

Ingredients for a 3L pot:

  • 1 beet (grated)
  • 1 carrot (grated)
  • 1/2 onion (sliced or cut into strips)
  • 1 sweet pepper (sliced)
  • 150 gr. of cabbage (shredded)
  • 4-5 potatoes (cut into cubes)
  • 1 big tomato (cut into cubes)
  • 1/2 of an apple (cut into small pieces)
  • 50ml of vegetable oil
  • 1 cove of garlic
  • 1 tsp of salt
  • Fresh parsley or dill

Procedure:

Put the pot on the stove and switch it on to high heat. Right away put the beet and oil; close the lid. When it starts to simmer, reduce the temperature to low and leave it for 5 minutes. Next put the tomato, garlic and apple; stir it and leave for 10 minutes. Do not change the temperature. After put the onion, sweet pepper, carrot and leave it again for 5-7 minutes. Again, stir everything in the pot, put the cabbage, potato and fill up with warm water almost to the edge (leave 2 cm). Close the lid. Turn on the stove temperature to high. When it starts boiling, open the lid, put salt, and mix it again. Then close the lid and switch off the stove, but leave the pot on on the stove for 20 minutes. In 20 minutes borshch is ready to eat. Serve with sour cream and fresh dill or parsley.
