steel dish with veggie korma - served in basket tray with naan

Introduction: Vegetable korma is Indian curry dish which has a base of yogurt, cream and spices. It has little sweet taste. Korma recipe can be made with Meat as well. 

Ingredients:

  • Red Onion: 2 each From Supermarket (Make Gravy)
  • Cashew: Approx.: 125gm From Grocery store/ Supermarket (Make paste)
  • Almond flax: 15-20gm (For garnishing)
  • Yogurt: 3 table spoons from Supermarket
  • Cream: Approx. 40ml from Supermarket
  • Paneer: 200 gm from Indian grocery store or Walmart/fresco
  • Saffron:  from Indian grocery store/ bulk barn (For garnishing)
  • Mixed vegetable: Frozen will be ok from Supermarket (carrot, potatoes, green beans, sweet corn, green peas) - defrost vegetable - 200-300g
  • Fruits: Apple (half) or Pineapple from Supermarket

Spices:

  • Cinnamon stick: 1 or 2 small sticks from Grocery store/ Supermarket
  • Cardamom: 2-3 pieces from Grocery store/ Supermarket
  • Bay leaves: 1 or 2 leaves from Grocery store/ Supermarket
  • Coriander seeds: Approx.:  ½ table spoon from Grocery store/Supermarket
  • Red chili powder: 1 pinch from Grocery store/ Super market
  • Asafetida: ½ tea spoons 
  • Salt: As per taste
  • Sugar: 2 table spoons
  • Coriander and cumin mix powder: 1 spoon. Grocery store/Super market
  • Oil/butter: 4 table spoons

Method:

  1. Take a bowl with water to soak Cashew nuts in it. We need to make smooth paste of cashew so we need cashew very soft. Once it become soft then blends it and makes smooth paste.
  2. Cut onion, wash and boiled it in the water until it gets soft. Let the cooled onion and blender jar.
  3. Take a shallow pan to cook Korma. Turn on stove at low heat, add 4 spoon oil or butter and heat it for a minute. Add a cinnamon stick, cardamom seeds or whole cardamom, coriander seeds, bay leaves to sauté. When you heard little sizzling noise then add asafetida and onion gravy in to that pan. Stir well and cook it for approximately for 5 minutes on medium heat. When you see onion gravy is getting light brown and bubbling in the pan then add cashew paste.
  4. Mix well and simmer it for another 5 minutes and add yogurt and cream. Stir it, well then add sugar, salt, chili powder, cumin mix coriander powder at this point as per above measured.
  5. Add cut vegetables and Paneer cubes (should be cut in even size). Cook on medium for 10-15 minutes and Korma is ready.
  6. Before 5 minutes to servedish, add chopped fruits (apple/ pineapple) in to Korma. Use Saffron water or pinch of Saffron and almond flakes to garnish Korma.

Vegetable Korma is ready to be served. Serve with Rice or Nan.
