Recipe for Ugali

Ugali is a cultural dish from many parts of Africa. It can be made with different types of flour, but I like to use corn flour. You can serve it with salad, vegetables, or meat sauce if you like. We eat it a lot in my family and it is very easy to cook. Before I came to Canada, I lived in Kenya and we made this a lot. I now cook it for my family even though we live in B.C.. Writing our cultural recipes is a nice way to share our culture together, even though we are so far away from our homes. I hope you like this one. Enjoy!
Ingredients
- 1 cup(or more) corn flour/maize flour.
- 3 cups of boiling water.
Tools
- saucepan
- wooden cooking spoon.
DIRECTIONS
- Bring the water to a boil very well.
- Add the flour to the bubbling water.
- Stir with a wooden spoon to break the lumps very well.
- Add more flour to thicken as needed.
- Fold up and down and smash it on the sides until all the liquid is gone and it is soft like dough.
- Shape it like a cake when it is done.
- Cook about 10 minutes more on the lowest heat to absorb all the moisture.
- Enjoy with your favorite side dish.
TIPS
- Serve with either vegetable sauce or meat sauce.
- Use vegetables like kale, spinach, cauliflower, green pepper, tomatoes to add a healthy touch.
- You can add margarine(1tbs) or milk(300ml) to taste.
