The egg yolk puff is a traditional dessert from the east of China and popular all over China. The taste is salty and sweet. The outside is crisp and inside is soft.
Ingredients  
Paste A 
- All-purpose flour 350g
 - general sugar  60g
 - butter 130g
 - water 180ml
 
Paste B  
- Cake flour  300g
 - Butter   160g
 
Filling C
- Red bean paste  720g
 - Salted duck egg 24
 
Instructions
Prepare Paste A
- Put the all-purpose flour, sugar, butter and water into a stand mixer bowl, then mix them with the beater paddle, until everything comes together in a rough of dough.
 - Switch to the dough hook and knead the dough at medium speed for about 7 minutes, until it’s smooth and elastic.
 
- Divide the dough into 24 small balls
 
Prepare Paste B
- Put the cake flour and butter into the mixer bowl and paddle, until uniformity.
 - Divide the dough into 24 small balls.
 
Prepare Filling C
- Preheat the oven to 380 degrees F.
 - Bake the salted duck egg yolk 10 minutes.
 - Spray some high-level wine on them.
 - Divide the Red bean paste into 24 small balls.
 - Enfold the salted egg with red bean paste, totally 24 balls. 
 
Steps 
- Roll the paste A small ball to a round sheet 
 - Enfold paste B with sheet A into a ball.
 - Do step 1 and step 2 again and again, totally 24 times.
 - Roll and fold four times in succession, then roll into a round sheet.
 
- Enfold filling c with round sheet into a ball.
 - Do step 3 and step 4 again and again, totally 24 times.
 - Brush some egg yolk on the 24 balls, decorate some sesame.
 
- Preheat the oven to 380 degrees F.
 - Bake 20 minutes.
