Noodles

A family recipe from Shanxi Province, Central China

Ingredients & equipment

  • 250 g flour noodles (make your own or buy standard oriental noodles)
  • 1 tsp sesame oil
  • 11 ounces skinless chicken breasts, sliced into strips
  • Dash dark soy sauce
  • 2 tbsp olive, nut or vegetable oil
  • 5 ounces bean sprouts
  • 2 tbsp light soy sauce
  • Fresh garlic sprouts
  • Five-spice powder - season to taste, roughly ¼ tsp

  • Chili sauce – season to taste

Philips Pasta Maker is required for preparing the noodles in this recipe or buy package of noodles. Philips Pasta Maker is available from Amazon, Costco for about $299.

Directions

  1. Prepare the noodles according to the instruction of the pasta maker.
  2. Mix 1 tbsp oil with prepared raw noodles and then steam the noodles for 3-5 minutes over a pan of boiling water.
  3. Season the chicken with a splash of dark soy sauce, five-spice powder, and chili sauce (to taste). Mix well.
  4. Heat a pan on high heat. Add 1 tbsp oil and heat until smoking. Then add the chicken and stir-fry for 2 to 3 minutes or until cooked through.
  5. Add the garlic sprouts and stir-fry for 3 minutes. Then add water with the light soy sauce and stir-fry for less than 1 minute. Add the cooked noodles on top of it. Wait until the juice is almost gone and add 1 tsp sesame oil and mix the noodles. Serve immediately.

* Five Spice Powder is a “staple” in Chinese cooking. Here are the ingredients if anyone wants to make it or buy it at any Chinese grocery store.
