Photo Credit: lenyvavsha / 123RF Stock Photo Article ID: 267 [Recipes- Fall 2016] Ingredients 900 g dry Romano beans 2 green plantains 1 tablespoon of salt 2 tablespoons of oil of your choice (I like to use avocado oil) 1 medium cooking onion 1 medium tomato Cilantro (coriander) Preparation First, put the beans in water the night before. Second, rinse the beans and put them in a pressure cooker with 2-3 cups of water and one tablespoon of oil. Put the pressure cooker on the stove until it goes off. You should then let it cool and check if the beans are tender. Peel and chop the green plantains, and throw them in with salt. Cook until plantains are tender too, about 15 minutes. Separately chop onion, cilantro, and tomato put in a pan with oil and fry them. Add them to the beans and serve with rice, egg, meat and avocado.
