Persian stew served in a white bowl

Ingredients:

  • 1½ cups fried chopped herbs and vegetables (fenugreek, chives, parsley, spinach, cilantro)
  • 1 cup boiled kidney beans
  • 1 cup fried chopped onion
  • Six dried limes or 1/2 cup fresh lime juice
  • 2 cups cubed boneless beef
  • 1/3 cup cooking oil
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1½ cups water or enough to cover beef

Directions:

  1. Fry meat over medium heat and stir until it changes colour and starts to brown.
  2. Add turmeric, salt, pepper and fried onion and stir again.
  3. Reduce heat.
  4. Add water, drained kidney beans. Cover and simmer for about an hour or until meat is tender.
  5. Add fried vegetables and dried limes (or lime juice), cover and simmer for additional 10-15 minutes.
  6. Your stew is ready. You can serve it with white rice.
