Close up of tandoori chicken

This is the most popular barbecue chicken and a favourite all over the subcontinent.

Ingredients: 

  • Chicken 1.2 kg
  • Cream 7 tbs
  • Cumin powder 1 tbs 
  • Garlic paste 1 tbs
  • Ginger paste 1 tbs
  • Lemon juice  4 tbs
  • Oil for brushing 
  • Orange colour 1 drop
  • Red chilli powder 1 tsp 
  • Saffron  a pinch
  • Salt
  • Yoghurt 7 tbs

Method:

  1. With a sharp knife make deep cuts on the pieces of breast, thigh and legs of the chicken.
  2. Make a paste of lemon juice, red chilli powder and salt and rub over chicken. Set aside for 10 minutes.
  3. Whisk yoghurt. Add cream, ginger and garlic pastes, cumin, saffron and the orange colour. Rub chicken with this mixture and keep aside for 3 hours.
  4. Skewer chicken and roast in a moderately hot oven for 8 minutes and then at 350 °F for 10 minutes.
  5. Remove from oven. Hang skewer for 5 – 7 minutes to let moisture drip off.
  6. Oiling with brush and roast for a further 5 minutes.
