This is a delicious pudding, in which rice is cooked on low heat in sweetened milk to make a rich creamy dish. 

Ingredients: 

  • Milk 1 litre of 3.2 % homo milk
  • Rice, long grain 60 grams or 1/4 cup
  • Almonds 15 grams/ 1tbs 
  • Green cardamom powder 5 grams / 1tsp
  • Saffron 1 pinch 
  • Cashews 10 - 12
  • Raisins 10 grams or 2 tsp
  • Sugars 120 grams or 1/2 cup

Method:

  1. Wash and soak rice for an hour.
  2. Blanch almonds. Remove the skin.
  3. Slice the almonds along with the cashews.
  4. Boil milk and reduce the heat.
  5. Add the rice and simmer till rice is cooked.
  6. Stir in the sugar. Simmer till milk thickens.
  7. Stir in cardamom powder, raisins, almonds, cashews and saffron.
  8. Pour in a serving bowl and refrigerate.

You can serve the Rice Kheer warm or cold.
