Rice Kheer

This is a delicious pudding, in which rice is cooked on low heat in sweetened milk to make a rich creamy dish.
Ingredients:
- Milk 1 litre of 3.2 % homo milk
- Rice, long grain 60 grams or 1/4 cup
- Almonds 15 grams/ 1tbs
- Green cardamom powder 5 grams / 1tsp
- Saffron 1 pinch
- Cashews 10 - 12
- Raisins 10 grams or 2 tsp
- Sugars 120 grams or 1/2 cup
Method:
- Wash and soak rice for an hour.
- Blanch almonds. Remove the skin.
- Slice the almonds along with the cashews.
- Boil milk and reduce the heat.
- Add the rice and simmer till rice is cooked.
- Stir in the sugar. Simmer till milk thickens.
- Stir in cardamom powder, raisins, almonds, cashews and saffron.
- Pour in a serving bowl and refrigerate.
You can serve the Rice Kheer warm or cold.
