almond cake

Ingredients:

  • 2 ½ cups of cream of wheat
  • 1 ½ cups of sugar
  • 1 cup of yoghurt
  • 5 tablespoons of melted butter
  • 2 tablespoons of baking powder
  • ¾ cup of unsweetened coconut flakes (optional)
  • Sugar syrup (recipe at the bottom)

Preparation:

  1. In a mixing bowl, whisk the yoghurt with sugar
  2. Add to this mixture the cream of wheat and mix well with wooden spoon
  3. Then, stir the melted butter, the baking powder and the coconut flakes if using, then continue mixing till they are well blended. It should have the texture of wet sand
  4. Take a 10 inch baking pan and brush it with some butter then spread the batter evenly into the pan
  5. Let it rest in the fridge for 30 minutes. Preheat your oven at 350 degrees.
  6. Cut the batter before baking it into small diamond shapes or squares and you can decorate each diamond or square with almonds or walnuts if you wish.
  7. Bake for 30 minutes in the oven or till you get a nice golden color, then pour your hot sugar syrup to it and let it cool down.

Sugar syrup:

  1. In a sauce pan, add 2 cups of water and 2 cups of sugar, whisk and put the pan over medium high heat till all the sugar dissolves and the mixture starts to boil
  2. Add 2 teaspoons of lemon juice and let it simmer over medium to low heat for 10 min.
  3. Remove from stove and stir in few drops of vanilla and you can also add 1 tablespoon of honey if you wish.
