Empanadas

In my last article, I talked about “Mate”, a traditional Argentinean drink.  Now I thought you might like to try eating something from my country.  Empanadas are a typical meal in Argentina. It is just a filling of ground beef with some other ingredients wrapped in dough. These are the most common, but they are also filled with different ingredients depending on each region.  If you are visiting   Argentina, you should taste this delight.

Dough

  • 500 grams of all purpose flour
  • 50 grams of butter
  • 1 teaspoon of salt
  • water

Directions

Put the flour and salt in a bowl and mix.  In the middle add the butter and little by little add the water.  Use your hands to mix the ingredients together until a soft dough.  (The dough should not stick to the fingers).

Form a ball and put in the refrigerator for 30 minutes.

Roll the dough and cut out round discs (use a small plate as mold)

Filling

  • 1 kg. of ground beef
  • 700 grams of onions
  • 2 tablespoons of tomato paste
  • salt - cumin - pepper
  • olives
  • boiled egg

Directions

In a pot put a little oil and add the onions for a couple minutes.  Then add the ground beef, the tomato paste, salt, cumin and pepper, and cook until the ground beef is cooked.  When the filling is cold add the olives and chopped boiled egg.

Fill the discs you made and bake the empanadas.  Place on sheets. Brush each empanada with egg.

Preheat oven to 380 degrees.  Bake approximately 40 to 50 minutes.

Enjoy!
