Pancit Bihon is one of the most favourite noodle dishes of every Filipino. It is served for many occasions, especially birthday parties. There is a famous saying in the Philippines, “Serve pancit for your birthday to have a long life.” 

Ingredients:

  • 1 lb of pancit bihon (or any type of rice noodles)
  • 1 lb of chicken (cooked, deboned, and cut into small slices)
  • ⅛ lb of pea pods or snow pea (cut into thin slices)
  • 1 large carrot (cut into thin slices)
  • ½ small cabbage
  • 2 stems of celery (finely chopped)
  • 1 medium sized onion (finely chopped)
  • 4 cloves of garlic (minced)
  • 1 tsp of ground black pepper
  • 1 chicken bouillon cube
  • 5 tbsp of soy sauce (to your taste)
  • 4 cups of chicken broth

Directions:

  1. First, cook the chicken in 4-5 cups of water for 3-5 minutes
  2. While waiting for the chicken to cook, soak the rice noodles in the water for about 10 minutes or more until they soften. Remove the noodles from the water.
  3. Next, cut the vegetables, onion, and garlic according to the sizes needed.
  4. When the chicken is cooked, set it aside and let it cool. Debone the chicken and cut it into small slices.
  5. Next, in a large pot, sauté the garlic and onion
  6. Add the chicken and let it cook for 2 minutes
  7. Then add the chicken broth (from the chicken you cooked before) and chicken cube (as seasoning), simmer for 15 minutes.
  8. Put in the vegetables and simmer for a few minutes
  9. When done, remove all the ingredients in the pot except for the liquid, then set them aside
  10. Now, add the soy sauce, rice noodles, and black pepper in the pot with the liquid. Mix well and cook until the liquid completely evaporates
  11. Lastly, put all the ingredients together, mix and simmer for a minute

You can add salt and black pepper to taste. This dish is usually enjoyed hot with lemon and cold drinks.
