Polish Lazy Dumpling

This great dish Leniwe kluski are artisan egg noodles/dumplings and they are a mouth-watering treat. This can be a delicious side dish, a meatless main course or a warm desert. They named them lazy , because it's just that they are easy to make . I will say ,maybe it is easy in Poland but in Canada you don’t have the same art of cottage cheese, so here you need to improvise and make one or find it in your nearest European deli shop .

Ingredients

  • 1 lb of cottage cheese (or dry curd cheese , farmers cheese or ricotta cheese,at room temperature)
  • 3 large eggs
  • 1 tsp salt
  • 1 cup flour ( all- purpose)

Directions

  • In the bowl you mix the cheese with 3 egg yolks until smooth.
  • In another bowl you beat 3 egg whites and pinch of salt until they become firm
  • Combine with the mix in the first bowl and add the flour.
  • Knead all of it to a sticky dough.
  • Put a large pot of salty water on to boil.
  • Remove dough to a floured surface and form into ½ inch- thick rope.
  • Cut diagonally into 1- or2- inch pieces, depending on how large you like them.
  • Drop dumplings into boiling water. Once dumplings have risen to the top ,boil for an additional 5-10 minutes.
  • Remove into a buttered bowl.

They can be served with different toppings just to let your imagination flow.

I myself love them with strawberry and cream.
