Qabili Palau

Ingredients:

  • Basmati rice 1.5 kg
  • lamb meat 1 kg
  • Carrots 200 g
  • Onion 100g
  • Raisins 100g
  • Almonds 100g
  • Pistachio 50 g
  • Sugar 2 tbsp
  • Water 3 litres
  • Cooking oil 6 tbsp
  • Salt 4 tsp
  • Cumin 1 tsp
  • Cardamom 1/2 tsp

Instructions:         

  1. First wash basmati rice, several times and soak it for 2 hours.
  2. Put 6 tbsp of oil in a pressure cooker, then put onion, salt, meat and add 4 cups of water and cook it on low heat for 15 minutes.
  3. Fry the sliced almonds and pistachios for one minute.
  4. Julienne carrots with a knife, then fry it with the same oil that you used earlier and add one tbsp sugar and add raisins.
  5. After that remove the carrot and raisins and keep them aside.
  6. Get a large pot and put the rice with 3 litres of water, spices, and wait for the water to fully boil.
  7. Add the drained rice carefully, stir and boil until the rice is half cooked and doubled in size just for 2 or 3 minutes, then drain the rice into a colander and put the rice back into the pot.
  8. Reduce the heat under the pot then carefully, add the meat, carrot, raisins.
  9. Cover the pot with foil or a clean cloth and then cover with the pot lid for 30 minutes.
  10. Serve the rice, meat, then garnish with fried carrots, raisons, almond and pistachio.
