Steamed chinese dumplings

Dumpling is a traditional Chinese food. It is very popular in China, from North to South and East to West. Especially in North China, almost every holiday you can find dumplings. Also,it's very diverse because it can be made by anything you like, by meat like beef, lamb, pork, chicken,shrimp, even by fish. For vegetarians, you can choose cabbage, mushroom,spinach,celery....... The smell that fills the house always reminds me of some holiday memories in China, really nostalgic and somehow just feels like my big family with me. This time I want to introduce chicken shrimp dumplings.


Ingredients
  • 2 bags dumpling wrappers (for 3 - 4 people)
  • 15 pcs shrimps
  • 400g chicken breast (or other meat like lamb, beef, pork)
  • 1 tablespoon light soy sauce.
  • 1/3 tablespoon dark soy sauce.
  • 4 tablespoon cooking oil
  • 1 tablespoon sesame oil
  • 1/2 tablespoon salt
  • 1/5 tablespoon pepper (can move if not like)
  • 12 eggs
  • a little chopped green onion (can substitute by onion)
  • a little chopped ginger (can move if not like)
Directions
  • Combine the minced shrimp and chicken in a bowl and add a little water if too dry.
  • Combine cooking oil, sesame oil, soy sauce,ginger , green onion, and salt, at last eggs. Mix to combine.
  • Place 2-3 tablespoons of filling in the middle of each dumpling wrapper, Fold one edge of the wrapper over to meet the other edge, and press to seal. Pleat the edges. Repeat with remaining dumpling wrappers.
  • Put in boiled water slightly, for 10-15 minutes.
  • Serve hot with dipping sauce (chili oil, sweet jinger, chopped garlic etc ) on the side.

Notes:

Moisten the edges with water if the dumpling wrapper is too dry.

Put 1/2 tablespoons salt in boiled water to avoid sticking together.

Put 2 or 3 times cold water after putting the dumplings in the pot.
