Falafel and fresh vegetables in pita bread on dark background.

Ingredients:

  • 1 ½ cups dried chickpeas
  • 1 small onion
  • 1 clove of garlic
  • ¼ cup cold water
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin powder
  • ¼  -  ½  teaspoon salt
  • 1 teaspoon baking soda
  • Oil for frying

Method:

  1. Soak the chickpeas overnight.
  2. Put all the ingredients in a food processor until we get a smooth and homogeneous mixture.
  3. Cover the falafel mix and refrigerate for 15 minutes.
  4. Form balls from the falafel mix using two spoons or a mold. Fry them in hot oil until we get a golden brown colour.  Then transfer them to a paper towel.
  5. Serve as is or in samoon bread with salad, fries, eggplant and amba sauce.
