    2 Cups flour 1/2 Cup sugar 3 Tsp baking powder 1/2 Tsp salt Rind of one lemon
  • 1 Egg
  • 1 Cup milk
  • 1/2 Cup butter, melted
  • 1 Cup fresh blueberries


  • 1/2 Cup melted butter
  • 1 Tbsp lemon juice
  • 1/2 Cup white sugar


  1. Mix flour, sugar, baking powder and salt
  2. Put lemon rind in small bowl
  3. Beat eggs in medium sized bowl
  4. Add milk and butter to the eggs
  5. Add egg mixture and lemon rind to dry ingredients
  6. Stir until just mixed (Batter will be lumpy)
  7. Stir in blueberries
  8. Fill muffin pans 2/3 full and bake at 425 degrees Fahrenheit for 20 minutes
