Lemon and poppy seed cupcakes with cheese cream frosting and lemon and lime zest on a rustic white w

This lime cake brings me memories of my years at elementary school. As a kid, I wanted to give a present to my teachers, so my mom taught me how to make this layered and savoury cake to give to my teachers as gift on specials days.

It is easy to make with kids as you don’t need to bake it and there is not too much to clean up afterwards. I love this lime cake because it is fresh, flavoury, and it’s perfect for any time of the year, especially in summer.

I like to make this dessert with my kids. They enjoy doing this as activity, but they love to eat it more.

INGREDIENTS:

  • 3-5 Lime juice (depending on if they are juicy)
  • 1 Can, Evaporated Milk
  • 1 Can Condensed Milk
  • 3-4 sleeves of Marias cookies (depends on the size of your dish)
  • 1 Lime or peach slices for decorating

Directions:

  • Mix the evaporated milk and condensed milk in a blender; add lime juice till the mixture is thick.
  • Line a glass dish with Marias cookies and cover them with a generous layer of the milk mixture, add another layer of cookies and after another layer of the milk mixture. Continue layering, finishing with the milk mixture.
  • Refrigerate for at least 5 to 6 hours. I prefer to leave it in the fridge overnight.
  • Remove from the fridge and decorate with slices of peach or lime or even Marias cookies crumbles and enjoy!
