Homemade Tomato Sauce

Every year there is a family tradition in my family to make tomato sauce that we can preserve and use for many months. I make sauce from fresh tomatoes from my garden. This tomato sauce is easy to make and all you need is a few basic ingredients and some patience.

You can use this homemade tomato sauce for pasta dishes, pizza, meat recipes, and chicken recipes, and here is how I make it:

Ingredients:

  • 3 kg fresh tomatoes
  • 2-3 tablespoons olive oil
  • 1 large onion
  • 3 garlic cloves
  • 1 teaspoon oregano
  • 7-8 basil leaves
  • 1/5 cup vinegar
  • salt to taste

Directions:

  • Blanch the tomatoes in boiling water for 60 seconds.
  • transfer to icy cold water and remove the skin from the tomatoes.
  • Chop the tomatoes into small chunks and set them aside.
  • In a large pot, heat oil. Add chopped onion and sauté it until golden for about 8 minutes; add crushed garlic in the last 2 minutes of sauteing.
  • Add chopped tomatoes salt and herbs (oregano and basil). Bring to a boil and let it cook for 60-90 min.
  • At the end, add the vinegar.
  • transfer to glass jars

If you want to store it in the fridge, transfer the sauce into sterilized jars. You can keep it in the fridge for up to 2 weeks.

If you wish to store the sauce in the freezer, you can freeze it in containers and use it for up to 2-3 months.
